We love a good salad, and this one is a sneak peek into Day 1 of our annual Salad Challenge. This recipe brings together the tang of pickling, and the sweetness of crisp apples. Beetroots have the ability to lower blood pressure, boost stamina, reduce inflammation, are full of cancer-preventing phytonutrients, are high in vitamin C (when eaten raw), fibre, potassium, manganese, B vitamin folate, and are best known for blood and liver purifying abilities.
